Educated at PBC, Simon is a product of the Munster Academy and made his first start as a sub academy player.

After one year in the academy he secured a full contract at the start of the 2011/12 season and made his Heineken Cup debut that same season.

The regular sarting 11 since then, he scored a hat-trick of tries in the final Heineken Cup pool game against Northampton Saints in January 2011 and ended the 2011/12 season as leading try scorer (12).

Representative honours include Munster & Ireland U18 & 20s. He marked his first appearance in an Ireland senior jersey with a try in the May 29th 2012 game against the Barbarians at Kingsholm and was included in the Ireland tour squad for the 3 Test June trip to New Zealand and played in the opening Test in Auckland.

His RBS 6 Nations debut came in Cardiff in February 2013 when he produced one of the moments of the tournament when he back-heeled Jamie Heaslip’s pass into his own hands before sending Cian Healy over in the corner for a magnificent try in the win over eventual champions Wales..

A try of his own in the same match meant it was a 6 Nations debut to remember, but his happiness was short lived when he broke a bone in his foot in Ireland’s second match of the tournament against England which forced him to miss 10 weeks of action.

Zebo was in Houston with the Ireland team when he received a call up to the British and Irish Lions, to act as cover for the injured Tommy Bowe, during the tour of Australia in June 2013.  He started against the NSW Waratahs and played on two other occasions against the Brumbies and the Melbourne Rebels.

Zebo signed a three-year deal with Munster in January 2013.

Cracked a bone in his left foot playing against Edinburgh in the Heineken Cup in October 2013 and made his return as a substitute against Gloucester in January 2014.

Came off the bench a week later and scored the fifth try against Edinburgh as Munster secured a home Heineken Cup quarter-final against Toulouse.

Scored five tries in the four games on his return from injury and was called into the Ireland Six Nations squad midway the 2014 Championship.

Included in the Ireland squad for Summer Tour to Argentina, June 2014.

Started in both tests of Ireland's Summer Tour to Argentina, June 2014.

Scored his third hat-trick of tries for the province in Munster's Guinness PRO12 win over Zebre at Thomond Park, September 2014.
